Our Story

Tom and Elizabeth met in the summer of 2019. Elizabeth was serving at a restaurant in downtown Milwaukee and Tom was hired to manage the wood-fired pizza station. Four years later, they were living together and starting their own food business.

Midnight Bakehouse started in December 2023. We began selling bread at winter farmers’ markets and introduced dried pasta in the summer of 2025. We are now proud cottage bakers who eat bread, pasta, and pizza all the time. Our bread and pasta are inspired by old-world recipes and techniques.

Tom has worked in numerous restaurants and pizzerias since he was a teenager. He became interested in rustic artisan bread and homemade pizza after spending a week in Tuscany in the summer of 2009. Tom likes to garden and utilize organic and local ingredients in his breads.

Elizabeth has worked in fine dining restaurants in Philadelphia, Chicago, and Milwaukee. She started making pasta from scratch in 2022. There was instantly a high demand from friends and family which inspired her to invest in a professional pasta making machine. Elizabeth loves growing tomatoes and making homemade tomato jam.
